Similar to the evolution of computer technology, Kimchi has gone through several stages of development. Long ago, from 918 to 1392 AD, the only ingredients used to make kimchi were salt and dried cabbage. Then, several varieties of fish paste and garlic were gradually added, eventually taking center stage as the primary ingredients of the Kimchi. The only method for people to obtain nutrients from vegetables during Korea's severe winters was to preserve, or "pickle," them. Pickling got so popular that people started pickling anything and everything, including cucumbers and bamboo shoots! Even soy sauce was created when people began to ferment soybeans! Isn't history interesting?
