For those of you out there who have never tried Kale or have decided without trying it that Kale is not for you, give me a chance to sway you.

When I first removed sugar from my diet, it was hard for me to find snacky foods that were healthy and didn't have added sugar. In my search for snack foods, I found a recipe for Kale Chips. I thought I must be mad, me... eating kale?! Until I stopped eating sugar, I didn't even like green beans, let alone Kale Chips. BUT, I was on a mission to find foods I liked that were good for me, so I decided to give it a shot. I mean, why not? Kale is pretty cheap so if I didn't like it, I would just toss the batch and move on to something else.

Let me note that eating Kale in this form might be the first step to introducing this healthy food into your diet. Once you have opened up your mind to the thought of eating kale in this form and liking it, you might be interested in eating it in different forms. Incorporating kale into soups, salads and other yummy dishes can only benefit you and your family.

With my first batch I realized, not only did I like kale chips, my entire family liked them! My kids were actually snacking on this healthy treat, jackpot! Soon, kale chips became something we had around often. We snacked on them while watching movies, while cooking dinner, or just when ever we felt like a snack. They keep well in a covered bowl, so you can make several batches and keep them for a few days!

If you have tried the kale chips from the store and have decided you don't like them, trust me on this, home made kale chips are a completely different thing with a completely different taste. Kale chips that have been mass-produced don't even come close to tasting like home-made. I urge you to give this recipe a shot. You will be so glad you did!

Ingredients

  • 1 or 2 bunches of Kale
  • 1 tsp of Himalayan or Celtic Sea salt
  • 1 tablespoon of olive oil
    Tip: You can season your chips however you like, but it’s suggested you try them with only salt first.

Directions:

  • Warm oven on to 400 degrees
  • Line large cookie sheet (or two) with parchment paper (cook only one pan at a time)
  • Rinse all your kale and pat dry with a paper towel
  • Remove the leaves from the stems and tear apart (into chip sized pieces)
  • Place all your kale pieces into a plastic bag
  • Add olive oil
  • Close the bag and work the olive oil around until all the pieces are coated with oil
  • Pour the kale onto the parchment paper and spread them out so none of them are overlapping if possible Note: It’s ok if some are touching, they will shrink while they cook
  • Once they are all spread out, evenly spread or sprinkle your salt over the kale chips
  • Cook for 15 to 20 minutes or until edges are brown and centers are green – Keep checking on your kale as all ovens cook differently.
