It's an interesting project, but I don't think you can do it on an automated base. What would probably work would be trying to form a network with people who actively, and humanly curate the communities where most of the non AI content is published (I'm sure each one has their own list and eventually get some compromise from living people to send you their data every couple of weeks. I'm sure even a monthly publication on this would be of value, still, I will have to be based on opinion and not data collection from the blockchain.
It would imply some cooperation from people, a good coordination from you and some extra work compiling the data you receive.
I see no perfect way around this. :)))

I was doing it (and more) all by myself manually before. Takes a loot of time, but I'm a bit of the stat-slut, loving counting, summarizing, making tables etc. HERE is my previous post of that type, from years before. It's actually a good source to check how does the platform develop, how does the SP of active writers grow etc.
Not sure if I'll continue with the list in that form though. I will be thinking about it.
I definitely see some pros of doing it. Simple example, manually checking 5k accounts allowed me to discover a couple of interesting profiles, including yours among others ;)
