Super easy coleslaw vegan option
I think coleslaw is the most eaten salad in the UK, well maybe waldorf for some....but you have it in salad bars (as the only "made" salad), for your baked potatoes, as sides in take aways etc... but the popular coleslaw is packed with E's and processed fats in mayo and all that stuff that salad shouldn't really have.
So....have a look at my version and try it yourself....pleasure guaranteed ;-)
Ingredients:
1/2 white or green cabbage (i used white here) shredded
1-2 carrots shredded
1 red pepper shredded
1 cup defrosted sweetcorn (or from a can)
few bunches of parsley leaves - copped
1 small onion/shallot/spring onion
1 apple shredded (which ever kind)
For the sauce/dip:
1/2 cup virgin olive oil (or any type of your favourite healthy oil)
2-3 table spoons of acv (apple cider vinegar) or lemon juice
dash of sweetener (brown sugar, honey, maple syrup, stewia or any other - maybe not white one)
himalayan salt and black pepper
How To Do It:
First massage the cabbage so it releases the juices. After it's getting softer, add other ingredients. Mix all sauce ingredients in the cup and taste (you may want to add more acv, or sweetener - do it your way). Then mix it all in a bowl and serve with a smile ;-)
