Summer Fruit Chia Pudding
This is my chia pudding with summer fruits recipe. This tastes amazing, easy to make and is so good for you! You don't need many ingredients, you can literally use what you have at home - it doesn't have to be exactly like mine. That is the great thing about these chia puddings, you can have endless combinations!
Chia seeds are extremely nutritional and have many benefits. Eating once ounce of chia seeds each day would provide 18 percent of daily calcium needs, 27 percent of phosphorus, 30 percent of manganese, and smaller amounts of potassium and copper.
Recipe
Ingredients:
1/2 cup of chia seeds
3 cup of coconut milk
1/4 cup of coconut cream
2 table spoon of vanilla
1 table spoon of maple syrup
Mixture of raspberries, blueberries, strawberries and nectarines
Intructions:
First, take a mason jar or any cup the size of a mason jar and pour in the 1/2 cup of chia seeds, it should fill around a 1/4 of the mason jar.
Then, add the coconut milk which should fill up almost to the top of the mason jar. You can also add the coconut cream, which is optional, but I think it gives the chia pudding richness and a strong coconut flavor.
Take a spoon and just mix the chia seeds with the milk and add the vanilla and maple syrup and keep stirring. This is to ensure there are no clumps of chia seeds.
Now, you can either leave it in the fridge for 2 hours or leave it overnight, which I would recommend because the chia pudding will get nice and thick and will make a great breakfast!
Finally, once your chia pudding has thickened in the fridge, you can add your choice of fruits. I chose strawberries, blueberries, raspberries and nectarines.
