yes, you could indeed. Though there is some caveats as it functions as I have explained how to set it up, I am working on getting a window manager on the vnc display so I can switch between things.

You could easily, for example, have a spare old tablet serving to display price charts or a chatroom or so. It is a little slower over wifi but it's ok, but you can get somewhat better speed by using USB, though that is really only for one device acting as a router as well as display.

And a Kindle? Could I use one for eye-friendly reading? Perhaps Amazon have made it difficult.

Nah, it just requires a vnc client, which does not require root. And yes. With one of my vnc clients two fingers slide up and down for scroll, though sometimes it reads a contract/expand two button zoom control, that probably can be disabled. There is regular touch mouse and trackpad emulation and you can disable it and only use the computer mouse or trackpad. Whichever suits you I guess.
