So, it's still Pistachio - because it used to be part of the original Neapolitan trio, but it's no longer included in the modern version.

✅ That's what I was looking for! Neapolitan Ice Cream is Vanilla, Strawberry and Chocolate - no Pistachio in sight.

In the olden days though, it was Pistachio, Vanilla and Cherry, to depict the colours of the Italian flag. Then the Yanks got at it.

It's my newfound favourite 😋 It has a subtle bitterness that works perfectly for me - I’m not a fan of anything too sweet.

You were so close last time and in this comment, you found the word I was looking for - Neapolitan. Strawberry wasn't in the original Neapolitan either - it was Pistachio, Vanilla and Cherry to depict the Italian flag.
