Spinach Cheese Recipe
Ingredients:
½ kg Spinach Chopped250 Gms Cottage Cheese / – (cut in bite size cubes)clarified butter 1 cup OR you can use 1 cup oilonion 1 large (finely sliced)green chilies 5 (chopped)fresh ginger 1 inch piece (julienne cut)red chili powder 1 tspsalt 1 tsp or to your taste3 - 4 Tomatoes – medium sizes (pureed with a green chili)
method :Heat 1 cup of oil in a frying pan and fry cubed chilies till it turns golden brown. Remove on a kitchen paper. Set aside.Heat 4 tbsp of oil in pan and add ginger garlic paste. Once it becomes golden, whole red chilies & fenugreek seeds to oil and cook for 1 minute.Add tomato puree to oil. Add salt and chili powder and mix. Cook till the water dries completely.Add frozen chopped spinach to the tomato paste. Cover and let it thaw for 10-15 mins.Add dried fenugreek leaves to the spinach and let the water dry completely.Add fried cheese to the spinach and mix. Cover for 4-5 mins over low heat till the stream of oil comes out on the side.

Recipe of famous Nigerian jollof that had Facebook CEO asking for more during his visit to the country.
Ingredients:
2 cups of rice
1 onion
1 red bell pepper / tatashe
500ml chopped tomatoes
100g tomato purée
2 scotch bonnet
100ml vegetable oil
Maggi cubes
Salt to taste
1 teaspoon curry
1 teaspoon thyme
1/2 teaspoon garlic
1/4 teaspoon ginger
2 cups water or stock
Instructions:
Blend your tomatoes, scotch bonnet and tatashe together. Chop your onions and keep them aside.
Put your rice into a bowl and soak with hot water. Allow this to soak for 10-15 minutes. Then, wash with warm water and keep aside, or parboil your rice and wash. This is important as you will get rid of excess starch in the rice.
Put your oil in a pot and allow it to heat up.
Add your chopped onions and allow to fry, but be sure not to burn them.
Add your blended ingredients and purée and allow to fry, just until you get rid of the sour taste (about 10-15 minutes).
Add your maggi, garlic, ginger, curry, thyme and salt and mix together. Be careful with your maggi as you do not want it too salty (2 maggi cubes for a cup of rice). Add your stock or water, and mix too. Taste to adjust to any seasoning.
Pour your rice into the pot and mix together, making sure it is covered in the tomato sauce.
Cook on low medium heat. Check your rice after at least 10 minutes, using a wooden spatula to dip into the rice. This helps with getting the sauce to get the bottom of the pot, so that it does not start burning when the rice is not cooked.
Cook until soft. Do not overcook your rice or get your rice too soggy. When rice is soft, lower the heat and allow to simmer so the water will get completely dry.

2 cups of potato gourd pieces
2 tablespoons of onion paste
1 teaspoon of garlic paste
Ginger paste 2 teaspoons
Yellow curry half teaspoon
2 teaspoons of red chilli powder
Coriander half tea spoon

Salt to taste
1 cup of tomato pieces
2 table spoons of oil

Recipe
First put the pan in the oil and spice the spices and fry the spices. Sprinkle the spices, cook them with nuts in a tomato piece, for 10 minutes. Now add potato pieces of potato, dry methi, and salt to taste and cook half a cup of water and let it cook for 20 minutes. Coriander and cauliflower just sprinkle coriander leaves on top.

Ingredients:
1 medium avocado , peeled
