Grilled Salmon with Avocado Salsa
Ingredients:
1 medium avocado , peeled
1Tbsp fresh lemon juice
2Tbsp finely minced fresh parsley
1 Tbsp finely minced fresh oregano
1/3cup chopped red onions
1/2cup chopped kalamata olives
2cupsdry orzo4 (6 oz) skinless salmon fillets
2 small Roma tomatoes , diced (1 cup)
2Tbsp olive oil , divided, plus more for brushing grillSalt.
1/3of a cucumber , peeled and chopped (1 cup)
1/2garlic cloves , minced (2 tsp)
1cup crumbled feta (2.5 oz)
