Pineapple, Bacon and Chicken Kabobs:
Recently I have become obsessed with pineapple! Pineapple smoothies, pineapple pizza, and now pineapple kabobs!
I decided to do a little research on the benefits of eating pineapple…
1)Loaded with vitamin C. This can help fight macular degeneration, an eye disease that affects aging populations.
2)Pineapple contains ¾ of the recommended amount of mineral manganese. Mineral Manganese helps develop healthy bones and may be helpful in preventing osteoporosis.
3)Pineapple’s bromelain may help reduce cold and sinus infections. Additionally, studies have indicated that bromelain may be useful in treating osteoarthritis
I guess I don’t need to feel too guilty about my recent obsession! Below is my favorite pineapple dish, kabobs with a sweet Hawaiian sauce!

Ingredients:
Kabobs-
6 Skewers (Soak wood skewers in water before cooking)
2 pounds’ large raw chicken breasts boneless, cubed
Fresh Pineapple cut into chunks
2 red bell peppers sliced into squares
1 Onion cubed
12 Thick cut bacon slices (two per skewer)
Sauce-
1.5 cups pineapple juice
1.5 tablespoons cornstarch
½ cup light brown sugar
1/8 cup soy sauce
1 tablespoon garlic
Kabob Directions: Poke the end of a bacon slice about an inch onto a skewer, and then slide a pineapple chunk on and wrap the bacon around and poke again, sliding down just enough to fit a piece of chicken, wrap bacon around again and poke. Alternate between pineapple, chicken, onion and red pepper, wrapping and poking the bacon. Note: If you slide the bacon all the way to the bottom you won't be able to wind it between each item.
Sauce Directions: Place all ingredients in a saucepan. Over medium heat, stir until cornstarch is dissolved. Bring to a boil, reduce heat and then simmer. Once the sauce has thickened set it aside.
Grill Kabobs on medium for approx. 15 minutes rotating a couple of times. I use a brush and paint some sauce on while they are grilling. Once thoroughly cooked lather kabobs with remaining sauce.
