Chicken Taquitos
Ingredients for Filling:
Boiled and shredded Chicken or Chicken leftover from soup etc.
Cheddar or Monterey Jack Cheese
Jalapeno or chilies (optional)
Corn Tortillas
Oil
Salt and Pepper to taste
Ingredients for Guacamole:
Avocados
Tomatoes
Lime
Cilantro
Green Onion
Garlic
Jalapeno (optional)
Salt and Pepper to taste
Instructions:
In a bowl add Shredded and Chicken, Cheese and minced pepper if you want it spicy.
Set aside.
For the Guacamole, chop or mince the ingredients. I like it chunky so I leave the Avocado and Tomatoes in bigger chunks. Mix the ingredients together and set aside so the flavors have time to meld.
In a frying pan put a small a bit of oil and when hot put a tortilla on it to warm up and make it pliable.
Take tortilla off when it is warm but not crispy. That comes after. Put it on a plate and put a heaping tablespoon of Chicken filling on it, spread down the center and roll it up tight. You may need a tooth pick to hold it together and keep it from unrolling. Make enough for a batch. Put more oil in the frying pan and heat it up. Place Tacquitos in the pan and fry them until golden brown. Continue until they are all cooked.
Place Tacquitos on a plate and top with Guacamole. Serve Immediately.
