Today I bring you a rich recipe that combines two powerful ingredients, on the one hand we have the apples that are delicious in the preparation of any dessert and on the other hand we have the delicious soy yogurt that has nothing to envy to the animal milk yogurt, with this ingredients we will prepare a delicious vegan cake, there is an ingredient that escapes me mentioning, chia seeds that is an excellent egg substitute. Vegan apple and yogurt cake
My secrets INGREDIENTS
♡ 300 g wheat flour
♡ 220 g sugar
♡ 100 g cold vegetable margarine or 90 g vegetable oil
♡ 3 teaspoons chia seeds
♡ 7g baking powder
♡ 1 soy yogurt (natural or fruit)
♡ 1 glass of soy milk
♡ 1 pinch of salt
♡ vanilla essence
For coverage:
♡ 2 large apples
♡ The juice of a half lemon
♡ 2 tablespoons sugar
♡ 3 tablespoons apricot or peach jam
♡ 2 tablespoons water
PREPARATION
Cooking time: 30min
Total: 45min
The first thing we will do is melt the margarine with the help of a frying pan, turn on the kitchen and in just seconds we will have our margarine melted, we will reserve, it must be at room temperature.
The next step will be to cut the apples in very thin strips, then we will choose our best bowl to incorporate them next to the set of lemon, we stir well and then we incorporate the sugar, we stir well and we will leave to rest, immediately we begin the preparation of the sponge cake.
It is time to preheat our oven to 180 º C.
With the help of a mixer, we will crush the chia seeds with the soya milk.
In another bowl, start by mixing the flour for the sugar we reserve, salt and powdered yeast, stir until well mixed and we are a homogeneous mixture.
The next step will be to add the yogurt, mix again with the help of the spatula and incorporate the essence of vanilla, we will continue mixing well and the last ingredient that we will incorporate will be the melted margarine.
I do not know if you have noticed that I have not used any machine, I recommend you to do it manually, is a simple mixture and not take long to get the consistency, the point that should resemble melted ice cream.
After obtaining the point of our mixture to prepare the sponge cake, pour into the mold that will be lined with baking paper, then place the apples from the edge to reach the center, this can choose your creativity to place them in a more orderly way, the apples will give a more beautiful and presentable touch to our recipe.
Ready to bake, the estimated time for baking our sponge cake are 25 to 30 minutes, after this time elapses, we will do something that is a classic in baking, with the help of a wooden stick we will prick, if it comes out with remains of dough, cook for a prudent time until the stick comes out clean.
Take it out of the oven and let it cool until it is at room temperature. Meanwhile, in a pot, heat water with the apricot jam and, when it is ready, spread it on the cake.
