This Fish is Very Respected in Japan, One Kilo of Rp2 Million

Meanwhile, according to Chef Embassy of Japan, Hori Ikuo, there are two best seasons to enjoy this Tai fish, namely in spring and autumn. He explained that in spring Tai fish have stronger stamina because of warm weather, making their muscles bigger and feels fresher and tasty. While in autumn Tai fish has just given birth, so the stamina of this fish has just been in the recovery phase so that the meat feels soft.
"Because it has two different terrezat times, the Tai fish has a different name according to when the fish was captured, when it was captured in spring called Sakura Tai, while in spring it was called Miji Tai," he said.
Chef Hori also explained, as a mark of respect for the fish, usually Tai fish is always processed from head to toe. On the bones, thorns, ribs, head, and tail are usually discarded but the tai fish are entirely processed into broth. The meat part is processed into cooking, and the skin can be an edible decoration.
This Tai fish also has two types of Tai fish obtained directly from the sea of Japan, and from captive breeding. The price is different, for Tai fish directly from the wild sold at Rp2 million per 1 kilogram, and for fish breeding Tai sold at Rp500 thousand.
