Vegan Mango Cake
To make this you'll need:
- 1 cup of mango puree
- 1/2 cup of orange juice
- 1/2 cup of sugar
- 1 1/2 cups of all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 of canola oil (or any neutral oil)
Pre-heat your oven to medium temperature. Mix the flour, the baking powder, the baking soda and salt in a bowl, and then in a separate bowl, mix the mango puree, with the orange juice, the sugar and the oil, add your wet ingredients to the dry ingredients and whisk just until a smooth batter texture.Make sure you don't over-mix. Pour the batter into a greased baking pan of your preference and bake for about 25 minutes or until a toothpick inserted in the center comes out clean.
I also made a ginger simple syrup which is totally optional but it will help to keep the moisture of your cake, I just added 1/2 cup of water and 1/2 cup of sugar to a saucepan with a thumb of peeled ginger until it boiled. Set aside to cool and then shower your cake with it, being careful not to drown your cake or else it will become mushy, a little goes a long way.
