Special Adobo With Cheese (Espesyal Adobo Kasi May Keso)
Filipinos are around the world and maybe you notice that we love rice. Maybe the reason why most of the Filipino food are best eaten with rice. But of course the rice is better with a dish
(Filipino dishes). Early Filipinos cooked their food normally by roasting, steaming or boiling methods. To keep it fresh longer, food was often cooked by immersion in vinegar and salt.

As a Filipino, one of my favorite dish is called Adobo. There are many different varieties of Adobo. Filipino use pork, chicken, liver or even chicken feet. But most of all I'm always craving for pork Adobo(with cheese). Ever since i came to my conscience, Adobo is always on the main menu of every restaurant and cafe(Carenderia) here in the Philippines. Also, this is the first dish that I learned how to cook.
According to Panlasang Pinoy these are the Ingredients and Instructions:
INGREDIENTS
2 lbs pork belly
2 tbsp garlic, minced or crushed
5 pieces dried bay leaves
4 tbsp vinegar
½ cup soy sauce
1 tbsp whole peppercorn
1 to 2 cups water
Salt to taste
INSTRUCTIONS
Combine the pork belly, soy sauce, and garlic then marinade for at least 1 hour
Heat the pot and put-in the marinated pork belly then cook for a few minutes
Add water, whole pepper corn, and dried bay leaves then bring to a boil. Simmer for 40 minutes to 1 hour
Put-in the vinegar and simmer for 12 to 15 minutes
Add salt to taste
