Recipe! Sour Cream Cake

I had some left over sour cream and had a new recipe

The name "sour cream cake" does not sound that appealing I'm sure, but I was so happy with the result! It was such a lovely, light and flavourful cake, I would really recommend. I used the recipe from Sweetest Menu, I didn't do any frosting though.

Ingredients

  • 210 grams plain flour
  • 2 teaspoons baking powder
  • 150 grams caster sugar
  • 1/4 teaspoon salt
  • 120 millilitres sunflower oil (any vegetable oil)
  • 2 teaspoons vanilla essence
  • 1 large egg
  • 240 millilitres sour cream

The steps

In a large bowl, I sifted the flour, baking powder, and added the sugar and salt, in the original recipe it details doing the liquids in a different bowl but I didn't want to. Instead I beat the egg in a separate bowl and added the oil, vanilla and egg mixture to the large bowl which had the dry ingredients.

After this, I added in the sour cream and stirred it. Just like the recipe said, it was a thicker mixture than I was used to!

After this step, it was time to pour it into the tin. I used an 7 to 8 inch cake tin I had, as I usually only use rectangle tins! This felt more special and professional.

I had a little bit of an issue as the baking paper I had used to line the tin lifted and some of the mixture went under it! It turned out fine with the paper in the end.

I baked the cake for about 30 minutes, at 160 degrees Celsius, it had a lovely golden top.

I was really happy with how it came out, it reminded me of those fluffy Japanese cakes, and it had a great flavour from the sour cream, even without any frosting.

I especially like the fact that it uses oil rather than butter and only one egg. I'll certainly be trying this recipe with less sugar to see if it works too 😁
