Recipe! Chicken Pot Pie

I recently made a chicken pie!

I'm really happy with how it turned out, especially because I prefer to make things like cakes or biscuits haha. This pie was so delicious, I used the BBC Good Food recipe, which was actually really easy to follow.

Ingredients

  • 2 tablespoon vegetable oil
  • about 700g of chicken breast
  • 2 onions
  • 1 celery stick
  • 2 carrots
  • 50 grams butter
  • 50 grams plain flour
  • 500 millilitres milk
  • 1 vegetable stock cube
  • 1 tablespoon mustard
  • some herbs!
  • 1 egg
  • 375 grams of ready-made puff pastry

If you compare my list of ingredients to the BBC good food recipe, you can see I've slightly adjusted it to what I used.


Steps
First of all, in a frying pan, I heated and cooked the cut chicken breast until it was ready.

I don't think I can post raw meat on steem? I don't know, but above is a picture of the seasoned cooked chicken that I put in a bowl.

After the chicken, I cooked the cut up veg until it was soft. After that was done, I transferred the veg into the same bowl as the chicken.

Next, I needed to melt together the butter, and then stir in the flour to make a paste. I think this is called a 'roux'?

When this paste was golden, I added in the milk slowly. I took this off the heat as I was scared it would get overwhelming trying to stop the milk from boiling (which would sour it). I mixed the milk or whisked it, until it was creamy.

It was hard to take photos at this stage as I was busy working out the recipe. I added in the stock, which I had dissolved in 250 millilitres of water, and when that was simmering, I added the chicken and veg back to the pan.

At this point, it was already looking delicious, I could imagine it on top of rice or just as a stew by itself!
I added in the mustard and more seasonings, and let it simmer for about 10 minutes, but I was constantly stirring as I'm scared I'll ruin the pan! It slowly started to thicken.

Then, I actually pre-heated my airfryer (which also has an oven feature if you haven't seen my other posts). I put it at 180 degrees Celsius.

I poured the ready mixture into the pyrex dish I was going to use.

As you can see, it almost filled the entire thing!! I was a bit worried I would have excess. But in the end, it fit perfectly. Now it was time to prepare the pastry.

As you can tell, this recipe only does a lid of pastry. I did an egg wash on top of everything, and made sure to cut a little cross so that the steam could escape (and the pie not explode).
I tried to decorate it with birds, a heart, and even the steemit logo on the bottom left!

After cooking it for about 25 or 30 minutes, it was ready! The mixture was slightly bubbling, and the pastry lid was a beautiful golden brown.

And it was done! It was so delicious, I definitely want to make it again. I think I would add more mustard though as I did less than the recipe stated.
