Dinner: needing to use ingredients

What I needed to use:

I had bought some double cream a while ago, and it lasts until July but I can't remember at all what I originally bought it for. I decided to start using it as it was just sitting in the back of my fridge haha.

So, I decided to look through TikTok for inspiration, and I found it!

One-pot pasta

TikTok cooks love to do one-pot pasta recipes, as, just like the name suggests, it uses only one pot for cooking! Less washing up and an easy recipe really appealed to me.

The original video has now been taken down, something about no longer being able to use the music they had used for the post, so I'll try my best to recall all the ingredients!

Ingredients

  • 2 cups pasta
  • olive oil
  • minced garlic
  • 500 millilitres of vegetable broth (dissolved in water)
  • 1/2 cup of cheddar cheese
  • 1/4 cup of double cream
  • some butter
  • seasoning (salt, pepper, parsley)

I added:

  • red pesto

Another thing I was also needing to use up!


Steps

So to start, I haven't taken pictures of the step by step as I was too hungry! But basically, heat the olive oil and minced garlic until it's hot enough! Then, add in the dry pasta and cover it all in the olive oil.

After this, I added in the vegetable broth, I didn't end up adding any salt to this because I'm sure the broth already had enough. I simmered it until some of the broth was absorbed into the pasta and the pasta was softening.

At this point, I added in the cream, a little bit of butter, and the cheese. I stirred this until it was creamy and all the cheese had melted in a bit.

Finally, I seasoned it all.

The above picture is what it looked like before I added in any of the red pesto! To be honest, this really was just a mac and cheese? Close enough anyways
