"Kala chana" is always good for health(being protein rich). The best thing about UP and Bihar people is that they regularly take this. In most of their dishes you may find this Kala chana and it is cheap there too.
I usually take it as sprouts and sometimes in sabzi.
"Litti chokha" is very famous especially in UP and Bihar again. And they are experts in making that. Every now and then I visit Varanasi, I prefer "Litty chokha" and other traditional dishes of UP, and I never forget to take roasted "Kala chana" from the street vendors.
