Buffalo Chicken Tacos

There's a great place in Manhattan, Kansas called Taco Lucha. If I owned a restaurant, Taco Lucha is everything that I would want my place to be. My favorite there is the Buffalo Chicken Taco. I replicated it at home, and it was a 9/10 in comparison with the original. Here's how I make them.

4 chicken breasts
half a package of bacon
2 limes
1 stick of butter
16 oz bottle of Frank's Red Hot Buffalo
1 bottle ranch dressing
1 jalepeno pepper
2 tablespoons worth of chopped cilantro
Flour tortillas

Dump the bottle of ranch, the jalepeno, the cilantro, juice and zest from 1 lime into a blender (Ninja is the best). Blend until smooth.

In a saucepan, melt the butter. When it's melted, dump in the buffalo sauce. Stir it up and let it sit.

Grill the chicken.

Cook the bacon until crispy. Put on some paper towels and smash it up.

Shred the chicken with two forks.

Wedge the other lime.

Build the taco: lay down the tortilla....put on some chicken.....spoon on the buffalo sauce....spoon on the jalepeno ranch....top with bacon bits.....squeeze a lime wedge

Goes great with a cold Sol or Pacifico.
