[Original Recipe] "Strammer Max": 🥓Honey glazed bacon with 🍳fried eggs on butter-roasted bread🍞

Today I want to show you guys a very simply, yet very delicious dish, which is a traditional fare originating from Berlin (Germany): #StrammerMax


The name "Strammer Max" goes back to the 1920's and the translation referes to something like "erect schlong"... Please don't as my why the Germans compare this phantastic food to male genitalia, but believe me, it still tastes pretty awesome!

So, how do we start?


First of all you want to start with the bacon. You can just fry it in a pan, but I would definitely advice you to cook it in the oven. To do so just put some nice, yummi slices of bacon on baking paper and place it on a roast. Glaze the bacon with thick, sweet honey and put everything in the oven (circulating air at 200°C / 392° F). Wait until the bacon gets a beautifully brown and crispy surface, which takes about 8-10 mins.

Fried bread

Next thing you want to do is the fried bread. You could also just take a plain slice of bread, but it will taste much better if you frie it in butter, which gives the bread a crispy surface with lots of rich, roasted tastes. Take some salted, french butter and add it in a hot pan. Put the slices of bread into the pan and fry both sides vigorously until they have a nice crunchy surface.

Fried eggs

Heat a non-stick or a cast iron pan to around 120°C / 250°F (medium to high heat, wait until the butter stops sizzling, but before it starts to turn brown). Add the egg and wait until the white begins to set, and then use a fork to gently break up the white closest to the yolk. Be careful not to pop the yolk. This helps to pull the layer of white that surrounds the yolk out towards the edges. This helps to fully cook the white, while the yolk remains liquid. Wait until the outer rims of the white have a slightly brown crust. Add salt and peper.


Now put it all together...!

Finally put the eggs on the bread and top them with the honey glazed bacon (I usually also add Ketchup -which is aweome, because it adds up a nice taste- but that’s not traditional, so I skipped that part here).

You’re done! I know it’s a very simple dish, and you should not prepare it, if you have high cholesterol levels…

But: it just tastes great and takes only a couple of minutes to cook while supplying enough energy for a whole day of hard work!
