Recipe Soto Betawi
Ingredients
1 kg of meat plus beef ribs
3 liters of water
200 ml of liquid milk
65 ml of coconut milk
to taste salt
to taste sugar
Insufficient cooking oil
Ground spices
10 grains of red onion
4 cloves garlic
3 pieces of curly red pepper
4 candlenuts
1 tsp coriander
1 tsp cumin
1 segment of turmeric finger
1 segment of ginger finger
1/2 teaspoon pepper grains
Complementary herbs
5 cloves
1 cinnamon stalk
2 cardamom grains
1 grain of nutmeg, halved
1 segang galangal finger, geprek
3 lemongrass sticks, geprek
4 orange leaves
2 bay leaves
Soto Complementary Study Materials
2 boiled eggs
2 pieces of potatoes, diced, fried
1 tomato, diced
2 leeks, thinly sliced
2 orange juice
to taste fried onion

Step
Boil meat & ribs until tender meat and water shrink. Reduce the heat.
Saute the finer spice with lemongrass, galangal, lime leaves & bay leaves until fragrant. If the seasoning is cooked, put the seasoning stir into the meat stew. Add the cloves, cinnamon, kalpulaga & nutmeg. Stir well.
If the cooking water of meat & seasoning has boiled again, enter milk & coconut milk. Stir gently so as not to break, wait for it to boil again.
Do not forget to season with salt & sugar to taste. If it feels right, turn off the heat. Cut the meat if it is too big.
Serve soto betawi with fried potatoes, tomato slices, sliced leeks, fried onions and emping crackers. Give orange lime for more delicious sauce
