"Recipe of the Day, Week No. 79: (Chicken Rejala Recipe)"

Week No.79 competition organized by @mvchacin mam in the Steemit Iron Chef community. Step 1
For the Chicken Rejala recipe, I took 1 kg of chicken. This recipe can be made with any chicken. I washed the chicken very well and drained the water. Now in a mixing bowl, I added one spoon of salt and one cup of sour yogurt to the chicken. Then I mixed everything and marinated it and left it to rest for half an hour.

Step 2:
Now to cook the chicken rejala, I heated cooking oil in a pot on the stove. I added 1/4 cup chopped onion, 4-5 white cardamoms, 2 pieces of cinnamon, 2 bay leaves to the oil. I mixed the spices with the oil and fried them, stirring all the spices very well until the onion is fried.

Step 3:
Once the onions are fried, I added 1 teaspoon of chili powder and stirred it. At this stage, I added 1/3 cup of onion paste, then stirred it and ground it so that the raw smell of the onion goes away. I ground the spices on low heat.

Step 4:
When the raw smell of the onion is gone, I added ginger paste, garlic paste 2 teaspoons, coriander powder 1 teaspoon to the ground spices. Then I kept the heat of the stove low and ground it very well. While grinding the spices, you have to be careful that they do not stick to the bottom of the pot. When the spices are fried and oil floats on top of the spices, I added the marinated chicken to the spices. Then I mixed the chicken with the spices and stirred it.

Step 5:
After mixing the chicken with the spices, I will wait for the chicken to boil. If the chicken is cooked, I will add 3 tablespoons of almond paste here. The sweetness of the rejala will come from these almonds, there is no need to add additional sugar. I have mixed the almond paste very well with the chicken.

Step 6:
At this stage of the chicken rejala recipe, I will add 1 teaspoon of white pepper powder, a handful of raisins, and two teaspoons of tomato sauce to the chicken. The tomato sauce will give the chicken rejala recipe a sour and spicy taste. Once everything is added, I stir it very well. Then add a black cardamom, cover it with a lid and cook for 10 minutes.

Step 7:
While cooking the chicken with the lid closed, excess water will come out of the chicken, I will stir the chicken with this water and cook it. When the water dries up and the spices stick to the chicken, you will know that the chicken is cooked. Then I added 1 cup of liquid milk to the chicken.

Step 8:
After adding milk, I mixed it with chicken and stirred it. Then I spread 6-7 green chillies and covered it with a lid and cooked it for 10 minutes. I removed the lid in between and fried it. I removed the lid and added 2 spoons of ghee, then I mixed everything and stirred it and covered it with a lid and kept it for 5 minutes.

Now the chicken rejala recipe is ready to serve.
