Recipe: Coffee Cake and a big mistake

Today I made that cake I mentioned in the previous post

I was really craving a sweet treat, but wanted to save money and I thought I might as well use ingredients I already have! So I searched the web for a good recipe for a coffee cake.

I found the recipe from the site "Pretty. Simple. Sweet.", the name alone gave me high hopes and I was excited to work hard for a sweet treat 😆

The ingredients

  • 245 grams plain flour
  • 1/2 tablespoon unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 3 tablespoons instant coffee, dissolved in 3 tablespoons of hot water
  • 115 grams unsalted butter
  • 300 grams of sugar
  • 2 eggs
  • 1 1/2 teaspoons of vanilla extract

Disclaimer

As I write this post, I just realised that I added over 100 grams extra of butter to the recipe in mine, I had no idea until and don't know how I got the numbers wrong! I think I accidentally read the measurement of the sugar (300 grams) and thought that was the butter...

No wonder my cake came out a bit strange! It's still edible, but I will talk more about how this affected the cake at the end of the post.

My measurements


Seeing as I mention my mistake, I might as well list the changed ingredient measurements that I used.

I used 210 grams, as I misread it as needing 300 grams. I'm glad I put less, really don't know how I didn't realise this!

flour

Because I adjusted the butter measurement, I did only 238 grams of the flour, not sure why really, I thought "less" butter might mean I needed to decrease the flour.

The steps

After prepping the 2 pound loaf tin I have with baking paper, I began combining the dry ingredients into a bowl. This was the flour, baking powder and salt.

Next, in a mug, I made the coffee mixture (mixing the hot water with the instant coffee).

I really like this coffee, it has such a nice strong smell, and a great flavour, so I was looking forward to it in the cake!

After this, I beat the butter and sugar together in a separate bowl. I didn't have an electric whisk with me so a nice arm workout!

Then, I added in the 2 eggs and vanilla extract and combined this together.

Next, I realised I needed more bowls! Altogether I had 3, one for the dry ingredients, wet mixture, and then the coffee mixed with the milk.
The instructions stated I had to mix the the flour and coffee gradually into the wet mixture, alternating between the two.

Eventually, the mixture was done, and I poured it into the prepared tin.

Yeah it's not the most appealing in the mixture above, but please remember I got the butter measurement wrong.

With the oven at 160 degrees Celsius, I baked it for the total 60 minutes.

As you can see, a small bit of the flour wasn't completely combined haha. When I flipped the cake onto the plate after it cooled, I was genuinely shocked at how oily it was. I had no idea about the butter at that point.

I still didn't know, and was so disappointed by the cake

How did my butter mistake affect the cake?

So the cake was super oily and greasy, and when I ate the two slices (without knowing) I was so disappointed because I couldn't taste the coffee flavour at all. But now, it's probably because of the 100 grams extra butter that the flavour isn't coming through 😥

Maybe I'll try remake the cake in the future, with the correct amount of butter. I'm so sad because my mistake cost me a lot of the butter I had just bought.

I'm glad that the cake didn't take me long to make, and that I have a sort of sweet treat. But now I'm really aware of the cake's increase in butter and worried about my cholesterol haha... I'll still eat the cake but not that thrilled.

I prefer to forget the number of times I've regretted putting less sugar or butter in a cake recipe to make it 'healthier' @jen0revision.

I'm sure there will be future cakes you can make and with this sort of experience you will be able to double check to avoid disappointment.
