Apple-licious Pancakes

Fluffy, light, delectable pancakes are already my weakness. Now pair that with sweet chunks of soft apple. These apple pancakes are utterly irresistible. By adding the apple to the already great pancake recipe, these pancakes take a bright, unique turn. I literally could not get enough of these.

Ingredients:
For the pancake batter:

  • 1 ½ cups flour
  • ¼ cup sugar
  • dash of salt
  • 3 ½ teaspoons baking powder
  • 3 tablespoons butter
  • 1 egg
  • 1 ¼ cup whole milk

For the apple pieces:

  • 2 medium apples, diced (I used honey crisp)
  • 2 tablespoons butter
  • 1 teaspoon cinnamon
  • 1 teaspoon brown sugar
  • 1 teaspoon white sugar
  • ¼ teaspoon cloves
  1. In a large bowl, combine, flour, sugar, salt, and baking powder. Stir with a fork to combine, push to edges of bowl to create a well. Set aside.
  2. Melt butter on a medium skillet. Set aside.
  3. In a small bowl, lightly beat egg and milk. Pour the egg/milk mixture along with the butter into the well in the flour mixture bowl.
  4. Using a whisk, stir until batter is mixed together. Batter will be lumpy and somewhat thick.
  5. Set batter aside, allowing ingredients to activate. In the same medium skillet as before, melt the butter for the apples. Begin warming skillet or griddle for pancakes at this time.
  6. While the butter is melting, stir together the apples, sugars, cloves, and cinnamon in a medium bowl. Add them to the melted butter and cook until just soft, about 5 minutes.
  7. Transfer the cooked apples to the pancake batter. Stir until just combined.
  8. Pour batter onto warmed griddle or skillet (medium heat) and cook each pancake for about 3 to 5 minutes until golden brown. Serve warm and enjoy!
