Curried Carrot Soup
Ingredients
two tablespoons vegetable oil
one onion, chopped
one tablespoon curry powder
two pounds carrots, chopped
four cups vegetable broth
two cups water, or as needed
INSTRUCTIONS
Heat oil in a large pot over mediumfire. Saute onion till tender and translucent. Mix in the curry powder. Add the chopped carrots, and stir till the carrots are coated. Pour in the vegetable broth, and simmer till the carrots are soft, about twenty minutes. Transfer the carrots and broth to a blender, and puree till smooth. Pour back into the pot, and thin with water to your preferred consistency.
