Lemon Poppy Scones
Ingredients
two cups all-purpose flour
three fourths cup white sugar
four teaspoons baking powder
half teaspoon salt
three fourths cup margarine
one lemon, zested and juiced
two tablespoons poppy seeds
half cup soy milk
half cup water
INSTRUCTIONS
Sift the flour, sugar, baking powder and salt into a large bowl. Slice in margarine till the mixture is the consistency of large grains of sand. I like to use my hands to rub the margarine into the flour. Mix in poppy seeds, lemon zest and lemon juice. Mix the soy milk and water, and gradually stir into the dry ingredients till the batter is moistened, but still thick like biscuit dough. You may not need all of the liquid.
Spoon quarter cup sized plops of batter onto the greased baking sheet so they are about three inches apart.
Bake for ten to fifteen minutes the preheated oven, till golden.
