Mango Coconut Chia Pudding
Ingredients
one mango, peeled and diced
two thhirds cup unsweetened coconut milk beverage
one tablespoon maple syrup
two tablespoons chia seeds
two tablespoons unsweetened coconut flakes
INSTRUCTIONS
Mash half of the mango in a bowl with a fork or puree in a food processor to desired consistency.Whisk coconut milk beverage and maple syrup into the mashed mango; mix in chia seeds and one tablespoon coconut flakes. Cover and refrigerate till thickened, at least one hour. Divide pudding between two bowls and top with diced mango and remaining coconut flakes.
