EASY CHICKEN RICE OMELETTE
INGREDIENTS :
One small finely chopped onion
Freshly ground black pepper
2 eggs
3 Tbsp extra virgin olive oil
1 cup cooked rice
1½ Tbsp milk
5 Tbsp cheddar cheese
1 tsp soy sauce
1 Tbsp tomato sauce
1/2 cup boneless chiken (1/2"in size)
1 cup chpped vegetables(capsicum,beans,peas,cabbage,mushroom,carrot)
Salt to taste
HOW TO PREPARE:
Heat 3 Tbsp oil in a non-stick pan and fry the chopped onion until becomes soft .Now add the chicken and cook for 5 minutes in low flame.Then add the vegetables ,salt and pepper and mix well.Now add the cooked rice and mix very well with all the ingredients for 2 minutes.Now add soy sauce and tomato sauce and mix all the things evenly.Take the fried rice in a bowl .
Now whisk 2 eggs and the milk in a bowl.Heat the rest 1 Tbsp oil in a non-stick pan .Now pour the egg mixture in the pan and spread it in a round shape to cover the the pan.
Now cover the pan with a lid and cook in a low flame.Let the egg set properly.Now put cheese and the fried rice on the omelette.With the edges of the omelette cover the rice and cheese.
Decorate with tomato ketchup and serve hot.
