Fast and nice mexican breakfast -Traditional Mexican scrambled eggs

Hola steemians:

I share my breakfast about this morning.
There are times that we get bored of having the same breakfast and we also have days where we need to make it quick, but not for that reason we are going to stop eating something that tastes good and nutritious.
This is a very common way in Mexico to have breakfast, It's easy and quick to do.

Ingredients: (1 person)
• 1 egg
• 1/4 onion
• 1/2 tomato
• parsley (optional)
• oil
• salt to taste
• pepper to taste

Method:

Cut in small squares the onion, the tomato and the parsley* (this is optional, i suggests put just a little bit cause the taste is strong).

Whisk the egg with a fork, keep it separate.

In a pan add the oil to low heat.

Stir the onion for 45 seconds.

Add the tomato for one minute and try not to cook a lot.

Add the salt and pepper and mix.

Add the parsley and cook for 30 seconds .

Pour the beaten eggs into the pan and stir, bringing in all the mixture from the edges of the pan.

Your eggs are ready when they look silky and slightly runny (they’ll continue to cook a little even after you’ve removed them from the heat).

We eat this with tortilla but it is also with toast.
