I hope you are all doing well and enjoying the amazing content in our vibrant food community.This is @isha-rehman and today I’m excited to participate in the delicious weekly contest that encourages us to share our best recipes. I have choose to share a dish that is very close to my heart the rich and flavor Beef Qourma a classic of Pakistani and Mughlai cuisine. This dish is not only pack with spice and aroma but also hold deep cultural and emotional value for many family.
A Little Background on Qourma
Qourma is a luxuriou curry that is often prepare during special event such as Eid wedding or festive gathering. Unlike regular currie qourma is cook slowly in a blend of aromatic spice ghee fried onion and yogurt. The result is a deep silky gravy that coat the meat perfectly and burst with flavor in every bite.This recipe has been passed down through generations in our family and today I’m thrilled to bring it to you all through this post.
Ingredients:
1 kg bee
2 large onions thinly sliced
1 tablespoon ginger garlic paste
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
Salt to taste
1/2 cup cooking oil or ghee
Fried onions for garnish
1. Fry the Onions
Start by heat the oil or ghee in a deep pot. Add the thinly slice onion and fry them on medium heat until they turn deeped golden brown. This step is very important as these onions are the base of the Qourma's flavor. Remove half of the fried onions and crush them lightly you’ll add these later to thicken the gravy.
2. Saute the Meat:
In the same oil add ginger-garlic paste and let it cook until it releases its aroma. Then add the beef pieces and cook on high heat until they are sealed and slightly browned around 6–8 minutes.
3. Spice it Up
Now add all the powdered spices: red chili coriander turmeric and salt. Also add all the whole spices: green and black cardamom cloves and cinnamon. Mix well to coat the meat in the spices.
4. Slow Cook
Add about 1 to 1.5 cups of water depend on your prefer gravy consistency. Cover and simmer on low to medium heat for 40 50 minute or until the beef is tender and fully cook. Stir occasional to prevent stick.
5. Finishing Touches
Once the meat is soft and the gravy is thick add the crushed fried onions and cook for another 5 minutes. Finally add garam masala . Mix gently and turn off the heat. Let it sit for a few minute before serving this rest time enhance the flavor.

serving Suggestion
Beef Qourma is traditionally serve with naan paratha or basmati rice. I love to serve it with a side of cucumber raita and a fresh green salad to balance the richnes of the dish.
For festive occasion this dish is often accompanied by zarda (sweet rice) or kheer as dessert making it a complete traditional meal.
Cooking Tips
For a deeper taste let the Qourma rest for a few hour before serving or make it a day ahead.
You can substitute beef with mutton or chicken if prefer but cook times will vary.
