I bet you haven´t tried this before - Pistachio, Herb & Leek Spread
This here is a mix of nuts, seeds, vegetables and herbs in a simple recipe ladies and gentleman. It is also quite nutritional since it contains nuts and seeds which are known for containing a variety of minerals and vitamins. Quick and easy idea for snack or surprise for your guests. Enjoy...
Ingredients:
1 cup sliced leek
½ cup pistachios (without shells)
2 tbsp lemon juice
2 cloves garlic
2 tbsp olive oil
1 tbsp parsley
2 pinches salt
1 pinch pepper
1 baguette with seeds
Yield: 3 slices
Preparation:
Peel and dice the garlic.
Heat vegetable oil in the pan, place in diced garlic and sauté for 3 minutes, stirring occasionally
Add sliced leek, pinch of salt and sauté for 5 minutes. Remove from heat and let it cool down for a few minutes.
Place the mixture in the blender and add pistachios, parsley, salt, pepper, olive oil and lemon juice.
Blend for a minute but not until completely smooth making sure some pistachios are still only partly crushed.
Cut baguette into 10 cm slices and toast them.
Spread the blended mixture over the toasted bread.
Preparation time: 5 minutes
Cooking time: 10 minutes
