Chocolate Buckeye
INGREDIENTS
one and half cups creamy peanut butter
half cup butter
one teaspoon vanilla extract
four cups sifted confectioners sugar
six ounces semi-sweet chocolate chips
two tablespoons shortening
DIRECTIONS
In a medium sized dish, stir peanut butter, butter, vanilla, and confectioners sugar with hands to form a smooth stiff dough. Shape into balls using two teaspoons of dough for each ball. Put on prepared pan, and refrigerate.
Melt shortening and chocolate together in a metal bowl over a pan of lightly simmering water. Mix occasionally until smooth, and eliminate from heat.
Eliminate balls from refrigerator. Insert a wooden toothpick into a ball, and dip into melted chocolate. Return to wax paper, chocolate side down, and eliminate toothpick. Do it again with remaining balls. Refrigerate for thirty minutes to set.
