What do I need to make fresh homemade pasta?
To make 1 kg of fresh homemade pasta, you will need:

  • 700 g durum wheat semolina (if you do not have one, you can replace it with wheat flour)
  • 4 eggs
  • 2 pinches of salt
  • Some water

The recipe for homemade fresh pasta
In a salad bowl , put your durum semolina (or your wheat flour if you do not have semolina), and form a well in the center. In this well, break your 4 eggs, and put your two pinches of salt.

Mix with the fingertips, preferably from the inside to the outside, and form a ball when all these ingredients are well mixed. If you can not form a ball, add a little water to moisten the dough and make it more malleable.

Once your ball is formed, put flour on a worktop, then knead your dough for about 10 minutes until it is soft but not sticky. Then wrap it in a cool film and put it in a salad bowl. Cover with a damp cloth and reserve in your refrigerator for half an hour.

Meanwhile, install your pasta machine in your kitchen. Set the thickness on the machine to the maximum for the moment.

Once the 30 minutes have elapsed, take out your ball and cut it into 6 pieces, then flatten them with your rolling pin forming rectangles. If your dough is too dry and it crumbles, moisten it.

Pass your first rectangle of dough in your machine, and decrease as you go through the thickness between the rollers, until you get the thickness you want. If you wish to make lasagna or ravioli , stop here. On the other hand, if you wanted to make other pasta shapes, install the rolling mill to cut your pasta. Then put your rectangles in the machine, making sure to flour them well so that pasta does not stick between them.

Finally, dry your pasta for about an hour. Consume your homemade fresh pasta in the next 2 days, or freeze them, so you can consume them until 2 months later.
