Homemade orange and carrot cupcakes

🍒INGREDIENTES🍒
To make the orange cake
- 10 tablespoons of butter or margarine at room temperature (200g)
- 1 cup of sugar (220g)
- 4 eggs
- 3/4 cup corn starch (100g) (cornstarch)
- 1 1/2 orange grated
- Juice of 1 orange 3/4 cup (180 mL)
- 1 3/4 cups of wheat flour (245g)
- 1 spoonful of baking powder, chemical (Royal powder) (15g)
To make the carrot cake
- 60ml of carrot juice
- 125 gr Flour
- 100gr butter
- 125 gr of sugar
- 3 gr baking powder
- 3 eggs
- 1 gr of salt
For the mirror glaze
- 75 ml of water
- 150 g of glucose
- 150 g of sugar
- 100 g of condensed milk
- 11 g of gelatin
- 50 ml of water (for gelatin)
- 150 g of white chocolate
coloring to taste (coffee)
🍒PROCESS🍒
To make the orange cake
1.- Sift the flour together with the corn starch and the yeast, mix well and reserve.
2.- Heat the oven to 180ºc
3.- Beat the eggs until there is a very tender cream, add the sugar and continue beating, add the butter, the orange zest and the juice and finally the flour sifted with the corn starch and the yeast, beat a little more and then the rest is already done.
4.- Mix until a well homogenous mass is obtained.
5.- Place the dough in a greased and floured mold of 24 cm in diameter and preferably in a chimney, it can not be smaller if it is not going to be thrown out.
6.- Take the oven to 180ºc for about 45 minutes.
let cool and unmold.
To make the carrot cake
1.- Carrot juice is extracted using an extractor and then placed in a 60ml glass
2.- Beat the egg whites until a snow point
3.- While it continues beating it continues adding the flour, the sugar, the salt and likewise the orange juice
4.- With the butter it is spread around the mold so that the mixture does not stick when put in the oven.
5.- Put in the oven for about 15 min and with the knife we puncture the surface to find out if it is ready or not.
For the mirror glaze
6.- The gelatine we hydrated in a container with cold water and let it rest.
7.- In another saucepan we put all the remaining ingredients water, glucose, condensed milk and sugar and mix it
8.- Boil at low flame until a boil
9.- We place the gelatin with the water previously rested until it melts.
10.- We place the white chocolate, and it will melt because the pan is still hot.
11.- When this warm medium we put the yellow dye or your preference and mix it well, if necessary you liquefy it.
12.- You can glaze depending on the temperature of the cake if it is not frozen enough, it is advisable to heat the glaze up to 30 ° C and if it is not less, but preferably it is a little frozen.
13.- At the end pour the mixture and glaze the cake and enjoy friends.
