I know that Hilsa fish is usually eaten fresh, but today at the market, I found it as dried fish (shutki). I didn’t realize it at first, so I asked the shopkeeper, "Brother, what kind of dried fish is this?"
The shopkeeper explained that this shutki looked different because it was much larger and had been cut into pieces. Unlike the other dried fish, which were placed together at the bottom, this one was kept separately in a dish. It was also moist, unlike regular shutki.
Since this fish is quite big, they cut it into pieces before selling it. If left whole like other dried fish, it wouldn’t taste as good. That’s why the shopkeepers carefully cut it, apply salt, and then sell it.

If you want, you can make this shutki at home. Simply get the fish, cut it, apply salt, and leave it to dry. Over time, it will turn into dried fish. Shutki can be cooked with different curries, making it a delicious and flavorful dish.
