Banana Pancakes

Hi steemians:
It's a lazy Sunday morning, we awaken gently by the light that filters through the windows and the delightful aroma of coffee that invades the House. It's the perfect day to enjoy a delicious breakfast with delicious banana pancake!

Banana Pancakes ingredients (12 pancakes):
Ripe bananas pulp 140 g
Butter 25 g ( 2 tablespoons)
Cake Flour 125 g (1 cups)
Medium Eggs 2
Fresh milk 200 g (1 cups)
Baking powder 6 g (1 teaspoons)
Nuts 80 g
White sugar 15 g (1 tablespoon)
Fine salt 1 pinch

Step 1:
Melting the butter over low heat, then let cool. Peel the bananas that must be ripe, cut the banana into small pieces and put them in a bowl, then mash the pulp with a fork to obtain a purée.
After that, divide the egg whites from the yolks. Put the yolks in a bowl with banana purée and mix with a whisk, then add the melted butter and the milk.
Continuing to stir with the whisk until it becomes clear.
Step 2:
Add the baking powder and the cake flour and sift it into the bowl, mix with a whisk.
Clean very well the whips and take another bowl where you beat egg whites by pouring the sugar and the pinch of salt a little at a time.
Then proceed to add the egg whites into the bowl whit the egg yolks, stirring with a spatula from top to bottom until smooth.
Roughly chop the nuts and put them aside.
Step 3:
Heat a lightly oiled griddle over medium-high heat.
Pour the batter onto the griddle, using approximately 1/4 cup for each pancake. Sprinkle the surface with chopped hazelnuts and cook for 2-3 minutes until brown on both sides and serve hot.

I make pancakes without eggs. I got so used of them I prefer them without eggs now.
