Fluffy Eggnog Pancakes with Homemade Eggnog - FOOD PHOTO SHOOT

Get ready for some good news…..we’re having eggnog pancakes!

Okay, so I had some egg yolks to use and homemade eggnog was just the thing. The other day this idea just came to me, "What better way to use them during the holidays than making some delicious eggnog from scratch?"

It’s all over now. I don’t know that we will ever be able to go back to regular pancakes. My family loved these so much that I wouldn’t be surprised if they blackmail me into making eggnog in June just so that I can make these. They were that good.

I’ve already made them twice this week and you know that I don’t do that very often because I’m always trying something new. I even used mostly whole wheat flour to try to keep them in the breakfast category. There are lots of eggs in them, and milk, so that basically equals health food. right? Either way they are going to make you feel like you’re eating dessert. Especially when topped with a little syrup and some whipped cream, Oh man!

What can I say, the holidays just get me in the mood for breakfast foods. Although, I feel I should let you in on the fact that these were more like lunch for us the first time I made them. Who says you have to eat pancakes only for breakfast?

You’ve just got to make these at some point between now and Christmas. You can totally skip the eggnog part too if you want and use regular eggnog instead. I just happen to live in a place that has never heard of eggnog.

That's a big stack of pancakes. Yesterday morning and the morning before I cooked banana pancakes. My wife made the mix from scratch. They were not as fluffy looking as these, but they were still good. Today I had eggs. Tomorrow I'll probably have eggs again. All of it with coffee.

I was having that idea revolve around my mind for weeks :D how did it turn out, also try other fats, butter for instance makes everything fluffier, olive oil makes things a bit crispier, well all observations from limited perspective :) still, cooking is about making a statement, so it's art as well :D

happy you man :D I wish I had a wife to make me pancakes, or at least have someone to share my wacky cooking adventures, not only but also :D

I had the banana pancakes again today. That's the 3rd time this month. Bananas are cheap here in the Philippines.

They sure do taste good. I have had peach and pineapple pancakes too. All of them are good.
