Bánh bò is a subtly sweet, chewy sponge cake from Vietnam. It is made from rice flour, water, sugar, and yeast, and has a honeycomb-like appearance on the inside because of numerous small air bubbles. This one is made with fresh Pandan leaves from our garden, which gives it a rich, bright green colour! 😍
