Venezuelan Meals: El Pabellón

The phonetics of this word have the following structure: pa / bae / yon.
This is a typical food of Venezuela, and from region to region it has some variants, here I am going to publish the basic recipe.
Ingredients
- Black beans (1 Kg.)
- Rice (1/2 Kg)
- Skirt steak (1 Kg)
- 4 Plantains
- Cheese of beef (1/4 Kg)
Method of Preparation
Black beans
The previous night, wash the black beans with plenty of water. Put them in a container (pot) with enough water and add a teaspoon of baking soda, and let it rest until the next morning.
The next day, remove the beans and pass them to a pressure cooker, filling it with three quarters of the total volume of the pot, add one or two tablespoons of vegetable oil and some leaves of celery, cilantro and parsley (in small amount).
Cook for 3/4 of an hour.
At the end of the cooking add 1 onion cut very finely, 4 cloves of garlic cut in the same way, slightly fried. Season with a spoonful of salt, a teaspoon of sugar and a teaspoon of cumin.
Rectify the seasoning.
Rice
As you usually prepare it.
Skirt steak
With a sharp knife remove the greasy and enervating parts.
Cut into large pieces and place in a pressure cooker, cooking for an hour.
At the end of cooking, remove the pieces of meat, wait for them to cool and begin to shred them into thin threads.
Make a fry of onion cut very small, garlic and 1 pepper chopped in the same way.
In a large pan add four tablespoons of vegetable oil (failing that 100 g of melted butter), the shredded meat and the prepared fry. Add two striped tomatoes. cook for 15 minutes. Mix and season with salt to taste.
Plantains
Peel ripe plantains and cut slices.
In a pan add a 1/2 cup of vegetable oil and fry the slices of plantains until golden brown.
Cheese of beef
Grate the cheese
Way to serve
In an oval dish serve equal portions of rice, meat and black beans, and around orderly place the slices of plantains. Sprinkle the black beans with the grated cheese.
Final comments
Because bananas contain a high content of tryptophan it has been determined that it is recommended for those people suffering from some depression. On the other hand, the black beans are rich in iron and recommended to stimulate the production of hemoglobin. Rice is high in carbohydrates.
All this leads us to the fact that this meal is complete when it is accompanied by a salad of tomatoes and onion seasoned with vegetable oil, vinegar and salt.
