Cooking vlog| Melon soup with Mkpafere (Oha leaf) recipe
Hey it's kitchen time, cook with me for my loved ones.
Today I'm going to show you how I cooked melon soup with mkpafere some days ago.
Mkpafere
Mkpafere is also known as oha leaves and it has a lot of health benefits. Of course you know that any green leaf is very rich in nutrients. Mkpafere leaves promotes digestion, rich in calcium and of course it serves as antioxidant. It is a healthy leaf to be added to our meal.
Preparation of ingredients
Wash, seasoned and steam the stock fish to be tasty and soft
I Washed, seasoned and steamed meat and periwinkle then put it aside.
I also seasoned and steamed fish, I used fresh scumbia fish.
I blended the melon, 3 cups of melon I dissolved it in water and it was ready to be fried.

- Meat
- Crayfish
- Stockfish
- Palm oil
- Pepper

Learn my recipe together, come closer let's start cooking.
First I fried the melon using red palm oil and onion
I fried it till it turns this way
I added crayfish and seasoning cubes to taste
I added melon and cover the pot to simmer for 5 minutes
Finally I added the mkpafere leafs and allow to simmer for 2 minutes then boom my soup was ready
So fresh and appetising
I served it hot with African swallow made from cassava called fufu swallow. You can eat it with any swallow of your choice and can even eat it with white rice.
But I served the demands of my people and they really enjoyed it.
