Blackberry Chipotle Chicken Wings

You'll want to prepare this sweet, smoky, crunchy, and utterly amazing wing repeatedly. These chicken wings actually combine some amazing flavors, and everybody who eats them will love them. The sweetness and faint smokiness of the Blackberry Chipotle Jam truly shine through, making even non-keto people want for more.

Because I really wanted the taste to show through, I decided to cook these with the marinade still on (as opposed to dipping them in sauce later). Starting them at 400°F aids in a light cooking, and then increasing the oven temperature to 425° helps the skin crisp up for an excellent chicken wing.

I had never purchased whole wings before, but it was so simple to butcher them (and so much less expensive than purchasing wings that had already been butchered). Additionally, you get to save the wing tips for later use in stock or bone broth preparation by freezing them.

  THE PREPARATION

-3 lbs. Chicken Wings (~20 wings, butchered)
-1/2 cup Blackberry Chipotle Jam
-1/2 cup Water
-Salt and Pepper to Taste

  1. Cut up the chicken wings first. Let the "V" form naturally by setting the chicken wing on a chopping board. Allow your knife to do the majority of the cutting as you cut into the V. Only cut through cartilage; do not cut through bone.

  1. Find the secondary "V" that is situated between the wing and the wing tip once the drummette has been separated from the wing. Cut off the wing tip using the weight of your knife. These can be frozen to use later to make bone broth.

  1. Mix 1/2 cup Blackberry Chipotle Jam with 1/2 cup water in a bowl. Whisk to mix, then add 2/3 of the marinade to the plastic bag along with the chicken wings, salt, and pepper. Give this at least 30 minutes, and possibly even overnight, to sit.

  1. Set the oven to 400F while you wait. Lay the chicken on a cookie sheet with a wire rack on top once the marinating process is complete. Bake for 15 minutes at 400F, flip, and then raise the temperature to 425F. Each wing should now have the bottom side exposed. Brush the remaining marinade over each wing, and bake for an additional 20 to 30 minutes, or until the wings are crisp.

  1. Take the dish out of the oven, let cool, and savor!
