Ingredients:

Hokkaido pumpkin, sweet potato, stinging nettle soup:

1 hokkaido pumpkin
3 small sweet potatoes
1 cup of stinging nettle (or spinach)
1 onion
1 clove of garlic
1 liter vegetable stock
1 tbsp coriander (or crushed coriander)
2-3 dl coconut milk
The juice of ½ lemon
1½ tsp. cayenne pepper
Salt and pepper

Cook the pumpkin and sweet potatoes in a pot of boiling water.

Blend all the ingredients and keep in the fridge. When it's time to eat, heat up the wanted amount . - Top with with parsley and roasted (no oil) pumpkin seeds.
