ITALIAN BRUSCHETTA SIMPLE RECIPE

Ingredients:
1 loaf of Italian baguette or crusty bread
4-5 ripe tomatoes (Roma tomatoes work best)
2-3 cloves of garlic
Fresh basil (a handful)
Extra virgin olive oil (about 3 tbsp)
Salt and pepper (to taste)
Balsamic vinegar (optional, about 1 tbsp)
1 teaspoon of sugar (optional, to balance acidity)
Instructions:
Prepare the tomatoes:
Cut the tomatoes in half and remove the seeds if you prefer a less watery topping (this is optional).
Dice the tomatoes into small cubes.
Place the chopped tomatoes in a bowl and sprinkle with a pinch of salt. Let them sit for about 10-15 minutes to release excess moisture.
Prepare the garlic and basil:
Peel and finely chop the garlic cloves.
Chop the fresh basil leaves into thin ribbons or small pieces.
Combine the tomato mixture:
Add the chopped garlic and basil to the diced tomatoes.
Drizzle with about 2 tablespoons of olive oil and mix well.
