The quintessential Sunday breakfast. [16th February, 2025]

Steemit greetings from my mother land #Nigeria. How are you all? I hope you all are fine and enjoying your day. I wish you all good health, wealth and a prosperous time ahead. Today, I am here in this amazing community to share Sunday breakfast cooking skills of 16/02/2025. I hope you all will get time to read and perhaps find it worthy to comment and vote.

It was a lazy Sunday morning, and I woke up craving something warm and satisfying. I ambled into the kitchen, still in my pajamas, and began gathering the ingredients for my trusty Sunday breakfast recipe.

First, I measured out 4 cups of uncooked rice and rinsed it thoroughly in a fine mesh sieve. I love using long-grain rice for this recipe, as it cooks up fluffy and separate.

Next, I added water to the pot, I brought it to a boil, and then added the rice. I reduced the heat to low, covered the pot with a tight-fitting cover, and let the rice until it was cooked through and tendered.

While the rice cooked, I started on the stew. I chopped up one large onion and two cloves of garlic, and sautéed them in a bit of oil until they were soft and fragrant.

Next, I added a pound of chicken and cooked until it was browned and cooked through. Now it was time to add the spices and flavourings that really make this stew special. I added a teaspoon of ground ginger, a teaspoon of paprika, and a pinch of salt and fresh pepper. I also added the chopped and blended fresh tomatoes, which adds a burst of juicy sweetness to the stew.

Finally, I poured in a cup of beef broth, brought the mixture to a simmer, and let it cook until the flavours had melded together and the stew had thickened slightly.

By this time, the rice was cooked and fluffy, and the stew was hot and bubbly. I fluffed the rice with a fork, and then served it alongside the stew. The combination of the reddish stew, the fluffy rice and the ripe banana was absolute perfection - a match made in heaven!

As I sat down to enjoy my delicious Sunday breakfast with my family, I felt grateful for this simple yet satisfying meal. It's a recipe that's been passed down through generations, and one that never fails to hit the spot.
