Just a simple soup.
I have become a little bit obsessive about soups this Winter, lol - not that I haven’t always loved a good soup… because I absolutely have! I don’t know whether it is just because it has been a particularly cold Winter so far, or maybe it is because I am getting older… in fact, perhaps that is why it feels colder as well haha!!! Could beeeee…
Whatever the reason, I have really been enjoying the simplicity of the humble Winter companion. In fact, I have been considerably boring about this new found obsession… despite being enthused by the likes of Jamie Oliver and many others who have shared their recipes, I have actually been making probably the most basic soup I ever have in my life, and have been loving it!
The local supermarket has these ready made vegetable soup packs which come all chopped up, ready to use and including essentially everything “vegetable” that you would want in the soup - including additions like celery, parsley, leeks etc. So its not missing the elements that add the additional dimensions of flavour!
I just cook that lot up, and then once its done, hand mashed and essentially ready to go… I fry up one pack of bacon, diced - until its really nice and crispy and throw that in and bring it to one more quick boil and done. Okay, it is a little more complex than that… in terms of what I do, but there are really only two ingredients - the soup pack, and the bacon pack (which I guess could be replaced with any other meat bits, or just left out altogether)
Sometimes, if I am feeling for something a little more hearty, then I just throw in a handful of already cooked egg noodles! And as you can see from the pic with the noodles in it… sometimes I am extra indulgent and I add left over mashed potato to the dipping bread haha… because why the heck not! Also, I will say that was bloody fabulous! Though I am a mashed potato sandwich kind of girl, and I know that concept grosses some people out, lol.
I really should get a little more adventurous, probably - maybe… haha! But for now, I am actually just enjoying the complete ease of it all - and on top of that, it gives me several days off from the kitchen… because soup, soup and more soup… even enough to give dad some for a few days too! Throw in a slice or two of home made sourdough and it really is a heavenly and homely bowl of food, lunch or dinner (in my opinion).
I caught this Jamie Oliver compilation on YouTube the other night and thought I would share it here, because it has some REALLY awesome, unusual, unique and tasty soup recipe ideas… and they are all really inexpensive too, which is always a bonus. Take a watch - it is worth it!
