Sugar-coated sesame cake

600g plain flour, 320g cold water, 40g corn oil, weigh into the dough kneading bucket
Knead into a smooth dough, cover with a lid and let it rest for 10 minutes
While the dough is resting, prepare the oil pastry: 140 grams of ordinary flour or low-gluten flour, 110 grams of corn oil, mix well
The shortbread is in a smooth and flowing state, not solid.
The filling is even simpler, 200 grams of white sugar, 100 grams of ordinary flour, mix well
After all the preparations are done, start rolling out the dough. This batch of ingredients is made in three waves, with five or six pieces in each wave.
Take one-third of the dough (320 grams), roll it out into a large sheet 1 mm thick, and trim the corners slightly to make it a standard rectangle (throw the cut corners into the remaining dough)
Take one-third of the puff pastry (about 80 grams), spread it evenly, leaving a little white at the top.
With the help of scraper, roll up
Cut into 5-6 equal portions, about 70 grams each. It is recommended to cut into trapezoidal shapes to facilitate closing later.
Fold the trapezoidal roll down towards the short side and pinch the opening tightly.
Pinch the edges one by one to form a ball
Press flat and roll into a round shape
With the side that was just sealed facing up, take 16 grams of filling and wrap it in
Pinch the tiger's mouth to close it
Press flat and roll it up and down into a cow tongue shape
Roll out the dough one by one
Spray a layer of water mist (the pile of sesame seeds next to it are to be used soon)
After spraying the water mist, press it directly into the sesame pile to make the surface of the cake covered with sesame seeds.
Apply a thick layer of corn oil to the pan
After preheating, add the dough
The electric baking pan I use is heated from top to bottom, so basically there is no need to flip it over.
If you use an ordinary frying pan or a single-sided electric baking pan, remember to turn it over halfway.
Remove from the pan when both sides are browned, and let cool on a wire rack (if it is hot, the sugar filling will burn your mouth)
Break it open and you will see that it is soft and has layers.
