Let's Make a special Local Cuisine (Afia Efere )
Welcome to my food blog!
On my today's menu i have Afia efere (white soup) so lets get cooking.
ingredients
• chicken
• catfish
• oziza leave
• crayfish
• yam
• seasoning cubes
• pepper
•perewinkle
• salt
I prepared the chicken and set that aside.
I also cut and cleaned up the fish.
I poured both the fish and the chicken into the pot add seasoning cubes pepper and salt and let this simmer for 10 minutes.
While the protein was cooking i peeled the yam and cook it differently, this yam will help thicken the soup.
I Pound the yam to achieve a smooth texture to avoid lumps when i add it to the soup.
Now i remove all the protein leaving only the stock, i then added the pounded yam to the stock the yam will loosen up making the stock thicken.
This is fresh ozziza leaves (hot leaves) i plucked washed and add to the already thick stock.
Then lastly i poured in the ingredients and give it a good stir let it simmer for 5 minutes.
That was the complete process of cooking white soup.
final result
This soup can be eaten wit Pounded yam, garri, fufu, semovita, and any solid of your choice, mine was served with pounded yam to complement the soup better but incase pounded yam is not available the above mentioned solid is okey.
I love making local dishes that give me this special satisfaction, this is one of our most cherishable local cuisine as an akwa ibom lady am always delighted to make this dishes giving credits to my cultural heritage.
