Today I will share a pitha recipe with you that I learned from my mother. Mother teaches us everything as a primary teacher. Be it the beginning of studying, or the beginning of learning to cook in the kitchen. When I was young, I used to sit next to the stove to watch my mother make pitha. I miss those days very much. Bangladesh is the country of pithapuli. Pitha is the vehicle of Bangladesh's tradition and culture. Pitha is not just a food. It is a combination of culinary art, tradition and joy. Today I will share with you the recipe for hand-cut semai pitha.
Ingredients:

1 cup rice powder | 1 liter milk | Coconut flakes | 500 grams date molasses |
Semai pitha preparation method:
Step 1:
First, I took 1 cup of rice powder in a bowl to make the rice powder dough. I added a spoon of salt to the rice powder and mixed it well. Then I made a soft dough by stirring it with my hands with a little water.

Step 2:
I cut small pieces from the flour dough and then made it like a long rope with the pressure of my hands. Then I took a little flour and pressed it in the palm of my hand to make small pithas. Since the pithas are thin and small, they are called semai pitha. I have made many pithas with the dough I made.

Step 3:
After making all the pithas, I turned on the stove to cook the pithas. First, I heated 1 liter of liquid milk in a pot.

Step 4:
Then I put a large pot on the stove and added 1 liter of water to it. I added cinnamon, cardamom, and bay leaves to the water to give the pithas a nice flavor. Then I added coconut flakes, and finally added date molasses.

Step 5:
After adding all the ingredients, I increased the heat of the stove and cooked until the water boiled. When the water boiled well, I put the semai pithas in the boiling water.

Step 6:
After adding the pithas to the molasses, I have to stir the pithas continuously with a spoon so that they do not stick to the bottom of the pot. When the pithas float on the water, you will understand that the pithas are cooked. At this stage, I will add the milk that was previously heated. Then I will stir the pithas and milk well and mix them.

Step 7:
After adding milk to the pitha, boil it for another two minutes and then turn off the heat. Now the semai pitha is ready.

I took a bowl to serve and served the pitha hot.
