Recipe of the Day, Week No: 56: "Kampung Chicken in Curry Sauce"

Hello everyone..
Today I am taking the time to share a delicious recipe. Today I happen to cook free-range chicken which is increasingly rare to find. It is not easy to get free-range chicken in the market, besides the price is very expensive.
So this is my chance to show you about delicious recipes and how to process free-range chicken into delicious dishes and of course become a special dish for the family at home.
Ingredients:
- 500 grams of free-range chicken meat.
- 200 grams of curry spices.
- 250 ml of coconut milk.
- 25 grams of gonseng coconut.
- Spices: 1 cardamom, 1 star anise, curry leaves and pandan leaves.
- Sufficient vegetable oil.
- 1 liter of water.
- 1 lime.
- 1 teaspoon of salt.
How to make:
The first step is to clean the chicken and make small pieces. Mix salt and lime juice. Let it sit for about 15 minutes to soak in.
The second step is to prepare a frying pan and heat enough vegetable oil.
Saute the spices and herbs.
Pour in the curry seasoning and saute briefly until fragrant.

- Add the coconut shake.
- Add the chicken, stir well and let the spices soak in.
- Pour in the coconut milk, stir well and let it boil.

Then add 1 liter of water.
Cook for 1 hour so that the chicken is really tender.
It would be better if you use a lid, so that the cooking process goes faster.
After the water has reduced, reduce the heat of the stove.
- Correct the taste and if it is right, immediately serve it on a plate or bowl.
Final Result :
Tips:
- Cook the free-range chicken for a duration of no less than 60 minutes. This is because free-range chicken has a more chewy and dense texture compared to broiler chicken.
- Use medium heat to prevent the food from burning.
- If the pan starts to dry out, add water little by little.
- This dish is perfect as an appetizer to accompany the main course.
Basically, kampung chicken meat has several differences when compared to broiler chicken meat. Kampung chicken meat has a distinctive aroma and tastes more savory. While broiler chicken meat does not have a very strong aroma.
